Abstract: Black Cincau Leaf (Mesona palustris BL) is clump crop with average height about 30-60 cm and good growed in dry and rain season. Leaf of Black Cincau as we know contain hydrocolloid component and high antioxidant activity. The aim of this experiment is to find out the effect extractor materials and presipitant to the characteristic of gelling agent component of Black Cincau Leaf. This research was conducted using Factorial Randomized Block Design (FRBD) with 2 factors. The first factor was extractor material (NaOH, Abu qi and Aquadest) and the second factor was presipitant (ethanol and methanol). Each treatment was repeated 3 times. The collected data was analyzed by ANOVA at the level of 1 % and 5 % and followed by DMRT test ( = 1%). The best treatment based on physical and chemical parameter was determined by Zeleny method. The results showed that extractor materials and presipitant affected significantly on antioxidant activity, total phenol, crude fiber, yield, viscosity, pH and lightness rate. Significant interaction between two factors happened on antioxidant activity, total phenol, crude fiber, yield, viscosity, pH and lightness rate. The best treatment was resulted from treatment with ethanol as presipitant and NaOH as extractor material. The Gelling Agent Component has characteristics as follows : antioxidant activity was found to be 49,48 %, total phenol 37,36 mg/ml, crude fiber 2,69 %, yield 23,17 %, viscosity 0,67 d.pas, pH 11,01 and lightness rate (L*) 22,6.
