|Abstract: ||Corn is an agriculture comodity which containing high value of nutrition. In
Indonesia, corn is second carbohydrate source after rice. Corn crop have a short life
cycle and can be planted at any season. Generally, corn production show an
increasing trend every years in Indonesia. Based on that aspects, corn have a large
potency to processed as substitution staple food at this recent condition that food
crisis was happened and also rice import that continously done by the goverment.
Require to be paid attention that the progress of industrialization causing impact to
the consumer behavior which tend to chosen instant food but remain to high quality.
One of the alternative way to solve this problem is by producing a product namely
instant corn biomass which perform good nutritional quality and simple in
consumption. One of the major step in instant corn biomass production is drying
process that involve heat, where the hot treatment during certain time may influence
the functional properties of product nutrition. One of the main functional properties
of protein affected by heat treatment during certain time is protein solubility.
The purpose of the research is to get the correct combination between
temperature and time of drying process which can yield instant corn biomass with
optimal protein solubility. Research method applied is Response Surface Method
with 2 treatment factor, each by 2 level and 1 central point that is drying temperature
C) and drying time ( 8,9,10 hours). Combination between factors and
repetition counted 5 times at central point yields 13 experiment treatments.
Observation done covers protein solubility of instant corn biomass. Eligibility test of
data analysis use Design Expert DX 7.1.5. trial version.
Result of the research show that combination between drying temperature and
time which yield instant corn biomass with optimal protein solubility is at
C during 8 hours, that yielded 55,485 % of protein solubility. Drying
temperature is the factor that gave significant impact to protein solubility while
drying time have not significant impact to this experiment response.|
